Training with Barry Callebaut

The Callebaut Chocolate Ambassadors share their know-how with artisans throughout the world. From the 17th to 19th November 2015, the Callebaut company visited our Training Centre.

Michał Kleiber, a technologist from Barry Callebaut, together with Damian Krępeć and Dariusz Kowalczewski, our technologists, worked with the participants on the issues of using chocolate in layer cakes and desserts served on plates. One day was devoted to the HoReCa.

Suggested recipes for layer cakes: with Ginger (main photo), Bailey's or Cuba dessert. Additionally, we focused on how they are served and arranged, we created pieces of art both for the palate and for the eye.
